THE CHARACTERISTICS OF THE DEIR
Deir, which means Monastery, comes from the marriage of Syrah and Merlot, with a prevalence of Syrah: the two grape varietals are vinified separately in open vats of stainless steel with a long maceration.
The wines are aged always separately in medium and small wooden casks for at least 12 months and then assembled later.
The wine has an enthralling olfactory impact: small black fruits, black cherries, aromatic herbs and dark minerals are just some of the countless sensations.
On the palate, everything commingles and meets anew. The dynamic flavors find harmony between the powerful tannins and the finesse of the fresh nuances. The imposing structure is always elegant, until the finish that radiates minerality.
